Our Favorite Meal
I have always loved brunch, in fact, our wedding reception was a brunch complete with shrimp and grits! Particularly, in my married life, brunch seems to be our go-to meal. We love to have friends over on a Saturday morning or after church on Sundays to enjoy a bountiful brunch, full of anything with eggs, baked goods, fruit, and lots of coffee, of course.
We recently had Jay's aunt, uncle, and cousin over for brunch, as his cousin has moved to LA for a summer internship. Naturally, we served them brunch. Jay is quite the chef at this point, since I am not too handy in the kitchen, but I make the best little sous chef!
One of our favorite dishes is a frittata, which is basically just an open omelette. So easy and delicious. For this one, we used zucchini, green onion, cheddar, and parsley, but the great thing is that you can pretty much use anything you want or anything you already have in the fridge. Saute a veggie and some sort of onion in olive oil in an oven-safe saute pan over medium heat until it's soft (10 mins or so), then pour over a mixture of eggs (only need about 4 or 5, unless your sautee pan is large), cheese, and herbs. Let all that sit on the stovetop until the edges of the eggs harden up a bit, then put it in the oven (make sure you don't have a plastic handle on your pan!) at 425 for about 5 minutes or until the middle is no longer liquidy. That's it! And, it's really healthy too. We literally have some variation of this at nearly every brunch.
We rounded out this meal with some Trader Joe's biscuits (recipe straight off the back of the whole grain baking mix box--with some parmesan and rosemary mixed in), some steel-cut oatmeal with blueberries, peaches, almonds, and brown sugar, and some apple-smoked bacon broiled on a wire rack and brushed with maple syrup--DELISH!!!
There are few things I love more than lingering over delicious brunch food with great company on a leisurely Saturday morning. Try it tomorrow!
